Ingredients
  

  • 2 cups cooked chicken breast shredded or chopped
  • 1/2 cup mayonnaise
  • 1/2 cup celery finely chopped
  • 2 tablespoons red onion finely diced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 1 tablespoon parsley or dill chopped (optional)

Method
 

  1. Prepare the chicken. Use cooked, cooled chicken breast. Shred or dice it depending on your preferred texture.
  2. Mix the base. In a large bowl, combine mayonnaise, Dijon mustard, and lemon juice.
  3. Add vegetables. Stir in celery, onion, and herbs.
  4. Combine everything. Add the chicken and mix until evenly coated.
  5. Adjust seasoning. Taste and add salt, pepper, or extra lemon juice as needed.
  6. Chill before serving. Refrigerate for at least 30 minutes for best flavor.
